The union, tenacity, and drive of Mexican families: that’s what Raúl Ramírez Degollado and Alfonso Hurtado Morellón wanted for El Bajío when they founded it in 1972. They now have 19 restaurants offering traditional Mexican cuisine and delicacies: anise gorditas, fish Veracruz style, and papanteco style tamales are only a few of the star dishes of all of Mexico’s regions.
Carmen “Titita” Ramírez Degollado ensures that the dishes are cooked with love according to the recipes of traditional Mexican cuisine. Together with a group of cooks, they prepare the dishes with care very early, day after day. Mole de Xico, dry noodles, black molasses and chile sauce, corn-flower dough for the tortillas, and other corn-based appetizers are some of the marvels they cook.
It is no coincidence that this restaurant, which started as a family business, has become a recognized Mexican restaurant chain in Mexico. What is their secret? For almost 50 years, El Bajío kept using the same ingredient in its dishes - tradition.

Delivery is something new for El Bajío: “We saw an opportunity to sell using this method,” says Franciso Javier López, El Bajío’s executive director. Despite its success, El Bajío has also had to meet the challenges of the pandemic and the delivery demand on various platforms. “Unfortunately, many restaurants had to close because they didn’t have the chance to adapt. I believe that this change in the industry favored us.”
