Mani in Pasta’s first pizzeria opened its doors in 2014, a year before the Italian and international gastronomy watershed event: Expo 2015. The event dedicated to food sustainability made people rediscover care for ingredients, forever changing the philosophy of many restaurants in our country, especially Milan. 

The founder of this successful format, Andrea Villani, anticipated the trend. His establishments churn out contemporary pizzas made with the highest quality ingredients. Mani in Pasta uses only sprouted and organic flour, which, in addition to being more assimilable by the body, also contains less sugar. 

They leave nothing to chance. Pizza makers record humidity data on an app and preparation time during kneading. Creating a protocol increases the company’s value and allows for a quality product that is always consistent.

The recipe has paid off, and after the first outlet in Via Pisacane 47, a stone’s throw from the bastions of Porta Venezia, openings followed in Via Padova and the elegant Sempione district (Via Procida 1). Andrea Villani does not rule out further expansion abroad, but not before establishing a solid base in Italy.
